That Ponte Vecchio taste....

Postby espressotime on Tue May 17, 2011 2:30 am

Been pulling shots with my new Strega for three weeks now and I like it very much.Easy in use and great looking mild espresso's.
But when I pulled a shot on my old Export this morning I remembered why I liked lever shots in the first place.
The sweetness, honey ,soft caramel and other flavours I like in espresso.

Good old Ponte Vecchio.I received it with noticeable scratches on the chrome,a group with bad seals, gaps in the bodycovers......but it produces excellent espresso.Amazing.

The PV, along with the Caravel, are truly marvels of culinary design. In the 50-some-odd years since they were designed, an immense amount of human effort has gone into research and development of espresso machines. But those two early 45-mm piston groups remain two of the very most effective ways of properly extracting the 2-3g of desirable solids from 14g of roasted, ground coffee beans.
