The PID has two set points so I can set one for Espresso and one for steam. Water is fed into the boiler by a pressure regulator hooked up to mains pressure. There will be a solenoid valve that will shut off the water supply when steam is being made. With mains water the boiler can be cooled quickly back down to Espresso temperature.
From what I have seen on other machines this appears to be a good approach.
