Tim, your pronouncements aside, my experience disagrees with them. Nothing more to say other than that there may be a meaningful mod to my machine, where the plastic piston has been replaced by a brass one and that the heat control mechanisms of my machine may be set differently than yours so it doesn't overheat. I won't further pursue a discussion where someone won't accept my reports of what I am experiencing. Other Pavoni owners can try for themselves. I think I'll go have a 'spro, some of Verve Coffee Roasters aptly named Sermon Espresso.

So pleased for you that you have one of astounding few exceptions to the rule and can clearly leave your pav on 24/7 without overheating issues. :roll: Whilst sipping on your Brand X Sermon blend instead of preaching to a congregation of one perhaps you will leave the rest of us heretics with Pavoni's that do overheat alone to discuss rationally what is the normal way to get good shots from them and live with their idiosyncrasies.

On balance a simple search for topics about temperature stable Pavoni's vs. Overheating Pavonis will let others make up there own mind about what the balanced truth may be. Pavoni's are not Temperature stable and overheat when left on!

As I recall from the Millenium that I owned the P-stat was set fairly low and I am sure that there are variances in each one that comes from the factory. As I recall mine was what I would have considered on the low end of acceptable and with cooling the portafilter I could produce very acceptable espressos even after having left the machine on for a while. Whether it be 20 minutes or an hour... so I don't see how leaving it on for longer than that would adversely affect the results. JMHO

Of course with the pre milleniums>>> that is another story altogether.
