BTW, the fine grind and light tamp are inspired by Orphan Espresso's Slap Shot technique. I don't think you need their gizmo, but they're experts on lever machines and they use the same fine grind and leveling tamp. See: http://www.orphanespresso.com/OE-SLAP-SHOT_p_2416.html That's what got me trying the same thing and it works. Also, I'm finding that too fine a grind can reduce crema production.
