Very cool Doug. Can't wait to hear more. The mystery valve ought to allow water out so it does not need to come through the steam wand? Are you sure you don't turn off the line in before pulling a shot? The shot would drain water above the standpipe, leaving "nothing but steam" to exit the stream wand. Turn on the tap, fill the boiler turn off the tap. Pull the shot, steam the milk, turn on the tap for the next one. Just a guess...
