Good question.. You don't need to hold it.
Maybe it's because the machine is wall mount, otherwise your arm is just hanging there.. I find this more convenient. what should you do with your other hand? Normally you let it rest on the countertop, but there isn't one.

That is a VERY COOL looking machine, Wouter! A modern version of the Caravel plus. VERY NICE! If you get a website up, please let us know.

I find it quite a compliment that I got this project to a level where it is seen as a commercial post.
The development of the ES3 has been my full-time job for the past two years.
To stay independent and be able to decide all by myself which direction to take regarding design / function / technique was a decision which proved to be a hard one. Especially when you want to make it real and put something on the market which works flawlessly.
It is only because we live in this internet era that it has become possible to do something like this.
There is not a big company behind me, there is just me and a CNC metal engineer. But I find this a beautiful way to start off.
I am a big fan of open source, I want to share my knowledge through my machines. The main idea behind the project was to give an inside in the technique.
Working on espresso machines was always a hobby of mine, and it still is.
Reinventing and improving the technique of the lever espresso machines from the past era. Home-Barista was the main instigator and got me excited about it in the first place. And I am grateful for that.
