Regarding maintaining temperature, I use a router speed control (dimmer) with my Peppina and it really keeps a repeatable quickly adjustable temperature. It has a three way switch-- full on, for warming up the water and off and variable for dialing in the temp. The temp is a dial and I just measured the water temperature at different dial settings, wrote it down and checked it now and then and it's pretty stable.

yes- of course- the patents have been in the public domain for some 40 years or more.
