I've done about 15 pour overs using TWW mixed with plastic jug store bought distilled water. I switched back to "regular" water this morning and the taste difference was very noticeable between the two. Enough of a difference for my wife (she didn't know I switched back to regular water) to say "what beans are these?" in a not so positive tone... So now down the rabbit hole of water. I ordered a Megahome stainless steel 1 gallon water distiller, $217 free shipping. The pay off will be less waste (plastic jugs) than actual money saved by distilling at home. It looks like TWW has changed it's packaging to be a bit more "earth" friendly. Assuming most people using TWW have access to an accurate scale, a bottle of the "mix" instead of a pre measured dose might be an interesting/ cost effective option.

I think it would be hard to be precise with a big bottle as you wouldn't be guaranteed the right ratio of minerals. unless they were in separate bottles.

I used the sample included with the brewology subscription and definitely noticed a positive difference with my Colombian gesha.

It looks like Taylor at TWW is making progress on a 1-part espresso formulation:

If you are interested in such a thing, you might keep an eye on their social media as it sounds like they could be selling pre-production samples shortly. Also, the Kickstarter campaign is over 200% funded. If they raise another $9k over the next 17 days, they will hit their stretch goal for offering a dedicated espresso formulation.

Just though some folks here might appreciate the update. I've been please with the exiting formulation for brewing purposes. It's more convenient and a better value than the water remineralization option I keep on hand now (mostly for travel but also for occasional home use):

At volume, the TWW water plus distilled water combo is basically a better value than buying Gerber Pure at our local CVS (at least at the non-sale price).

They've put pre-production samples up on their website for their espresso formulation.

Here are the basic stats they listed on their Kickstarter, maybe Taylor can give us some more details?

1050mg Magnesium Sulfate, 300mg Calcium Citrate and 150mg Potassium Bicarbonate.

The short version of the story is that I was wrong in assuming this had to be a two part system. The issues with clumping early on were the result of too much moisture in the air and not a chemical reaction. Once we solved the moisture issue (dehumidifiers) there was no more clumping. In there steady state form none of the minerals create a chemical reaction, only after you put them into water (like alka-seltzer). As we ship them all over we can use the feedback to make any other modifications to the recipe or packaging.

How many ppm of calcium carbonate and magnesium carbonate would that equate to? Sorry if that question doesn't make sense.
