The other cans I have are sealed and don't have the valve on them. This one is unique to my experience. I get the cans from a chocolate shop that has an espresso machine and uses Illy beans. This one is the most recent, and from over a year ago, so things may have changed in the last coupla years. This is, in fact, a simple and primitive one-way valve. If I leave the can out for a half hour and then stick it back in the fridge, the next time I open it, it gasps.Horseshoot wrote:I could be mistaken, but I have never thought that the Illy cans have a degassing valve on them. I have some cans with that valve on them. I do not know how old they are. I have a friend with recent shipments from Illy... will look at his cans.
I wonder which way the valve goes? Seems if it allowed gas out, then the nitrogen Illy puts in would be lost. Maybe it is a valve that only goes in (to let the nitrogen in in the first place. Hmmm.... Maybe somebody needs to ask Illy. A mystery.
