Espresso pours too fast, no crema - suggestions?

Postby seeka on Tue Aug 21, 2007 6:10 am

Hi guys, noobie here looking for some help.

I can't seem to create any kind of my crema on my espresso shots. I'm using a Gaggia Coffee deluxe, I grind my beans prior to brewing, heat the filter basket accordingly and tamper to the required 30lbs of pressure. I've used several types of beans from all over. However, my shots seem to pour in roughly 10 seconds which I know is far too fast.

I'm wondering is there still something I'm doing wrong or maybe I can adjust my machine in some way.

Any help or suggestions welcome.

If you're new to making espresso at home, the site's FAQs and Favorites Digest includes recommended reading. With pours that fast, I recommend grinding a lot finer. Try setting the grinder fine enough to "choke" (stall) the pump, then backing off the grind setting. The coffee is fresh, right? Fast, crema-less pours are some of the signs of stale coffee.
