I've been having very good results with these beans and they are becoming my favorite. 7 days after roasting, they develop a wonderful rich flavor. They are quite dense green and I think they need some time to cook thoroughly. I think they do best in espresso with a somewhat overdose basket (19 grams) at 200F. I had trouble measuring the moisture because the beans are very hard and my probes didn't go in. Anyway, the measured humidity was 2% and the min that the tool is accurate for is anything above 5%, so I think the measurement was wrong. I got a nice crunch and I can taste the distinguished flavor of the beans by chewing on them after the roast. Because they are natural processed (sun/wind processed), they show uneven discoloration. The beans are low in acidity but they have rich creamy flavors.
