What is it with Sumatra?

Postby Fullsack on Mon Dec 08, 2008 9:39 pm

I just started roasting this coffee and have gone though a bunch of it without getting anything like some of the great Sumatras I have tasted. Don't think it is the greens, I'm roasting both Sweet Marias Classic Mandheling and Volcafe's Lake Tawar, both known as good coffees. Never had this problem with any of the coffees I usually roast: Brazil, Sulawesi, Antigua, Sidamo, Yemen, Kenyan, etc.

Sometimes, it's best to use a higher MET with Sumatras.

Sometimes taking them a bit further than normal. eg 440 vs 428 drop for Yrg or Sidamo, 432 for Kenyan.
