"Nose" is a wine tasting term; and means the smell. "Floral," if that is what you were looking for, is flowers, and is most frequently applied to Huehuetenangos and Sidamo/Yrgs.
Coffee tasters, of course, distinguish between the dry fragrance of the grounds, and wet aroma as the cup is brewing. I'm not sure which one they mean; but most tasters think dry aroma is a better predictor of the coffee's ultimate quality.
