Modernising 1955 Probat LG5

Hello, I have been reading threads on this forum for a few months now and learning so much from it! I am still requiring a lot of information though. I am an industrial electrical engineer so I do understand most electrical appliances. My very close friend has purchased a 1955 LG 5 coffee roaster recently. I have managed to install two thermocouples for bean and oven temp which are currently hooked up to a set of digital displays. I want to however have the machine hooked up to a PC to use some sort of software to manage and track the profiles for consistency rather than doing it all by hand. I am based in the UK so any help on products over here would be great. Thanks

There's plenty of data-logging devices available on the market, Phidgets and the TC4C just to name two I own and like. Please share pics and comment about your journey!

phidgits 1048 interface with artisan software. Thermocouple go to the phidgit and a USB cord goes from phidgit to your pc.
