Typically I see 1C take off between 390*-400*F bt. I'm using an Omega XCIB-K163 t/c that sticks out from the wall approx. 1".

Hi Jim,

my drop in is high here, with a turning point of ~ 220F (170F + 50F on your instrumentation). Is that typical for you also when you're unable to reach first crack in 9 minutes?

I'd like to drop in cooler, yet still have the ramp up ability to reach first crack in ~ 9 minutes, though perhaps that's not necessary...

No, my roasts turn at around 150F, one minute after drop. I should probably try a little more preheat.

I did a couple of 227g roasts today with 320*F Et & 300*ET drops with 216*F & 210*F turn arounds respectively.

Based on JohnB's ability to maintain close to 20F/min with a Variac, I hunted around a bit more and found another outlet on a different circuit that measured 122V with no load, 118.5V under full load. On this outlet, I was able to draw about 710W, and saw closer to 18F/min sustainable. So an additional 1.5V translated to an additional 3F/min rate-of-rise (seemingly).

I'm pretty happy with this, but if I did pursue the Variac route, can someone explain how it's safe to crank up the voltage on a circuit that's not able to provide it without the 'help'?
