I use presto hot air popper, and it does not have side fins, it only has a bottom fan. I have to hold the popper all the time and keep on shaking at an angle. I need to do the shaking because otherwise the coffee beans do not move or rotate, and the beans at the bottom burns in no time, which leads to popper shutting off. I have to put very small amount
I usually fill the chamber with coffee beans. Also, it takes around 8+/- minutes to FC+.
My question here is if the thermostat is at work, then it would shut off the whole popper? Or it just turns off the heat while the fan is still working?
If it is the later, then the heat is on and off which may cause the inconsistency. But if the heat is never turned off unless the whole unit stops working, then it is a whole different business.
I just read some articles on suggested modifications. It seems easy to fix the thermo problem. To resolve the non-moving beans at the bottom of the chamber, someone suggested adding stainless steel screen at the bottom to add some space that allows the air to blow the beans. I will try doing both modifications. Also, I will extend the top with a chimney.

The stat only cuts the heat. The white unit is it; bypass by wiring together the two leads

I did the modification. Roasting now takes 5-6 minutes, instead of 8+/-. I am not sure yet of the results, but I can see more oils on the beans than before. Hope it is a good sign.
