Actually I do have another question before I order, Is there any advantage or disadvantage to me ordering a shorter sheathed thermocouple for the exhaust, I can just picture is awkwardly protruding and I wonder if a large amount of the sheath being outside of the exhaust causing any issue in regards to accuracy?

The probe tip (location of thermocouple bead) should protrude into the exhaust piping to its diametral midpoint. It should preferably be in a straight section of piping having a length of 3 pipe diameters prior to the thermocouple and 3 pipe diameters afterwards.

You can order just about any length you want - custom lengths usually take an additional week.
