As title says what's the best way to get the most out of older beans?
I'm guessing a shorter faster roast ?

Old beans are dry beans. Get the roast over with as quick as you can without tipping/scorching, and don't hold your expectations too high.

Old bean also scorch easily, so the fast roast will have to be done while keeping ETs low. In a drum roaster, this means roasting about 20% to 30% less than you would with new beans, and throttling back the heat.
