You may contact Paul/Craig on that, but I think I'd just follow their recommendations. It appears pretty simple. No harm in popping off the cover to inspect the grease as well.

Ultimately, probably would depend on your duty cycle of the grinder.

I don't think you need to do this every year, to be honest. But yeah, it depends on use. I'll probably consider opening mine up in 3-4 years...

Bi-annual means every two years. Semi-annual means twice a year.

What ever Bi-annual means. The guys at HG-One mean TWICE a year servicing.
"Your general maintenance routine is equally simple. Even for the most fastidious, the HG one grinder only requires a twice yearly check up. With just two parts that require servicing, and with each routine taking only twenty minutes, you can spend your time doing more important things in your already busy life"

bi-annual = twice a year (twice within a time period that is a year long, to be pedantic)
biennual = once every two years
In any case, no doubt they are being safe. Usage and the 'hardness' of the beans being ground will vary widely.

My question is what brand or kind of grease does one use to service the grinder?

"Superlube" I believe is the brand name that they use as per Craig.
