Off of HB's list of "Our Favourite Roasters," I chose and went to T...(I'm not sure if I should actually post the name). The espresso was wonderful so I asked what it was, then purchased it...Finca Vista Hermosa single-origin espresso.

It was clearly too old since it was far beyond the four to eight day roasting date and once I suggested that, I was told any younger and I would be getting bubbles...and according to him, now is the perfect time to brew it. Does that sound right to you?

Regardless, I ground and pulled...much better than my canned Illy.

Nice! Congrats on the success. As for the beans age it can vary depending on bean and roast. Perhaps someone else will have some insight on that particular bean, however 2 weeks + is really pushing it for most beans IMHO. I could be wrong.
