Grinding problem with Fiorenzato T80

I have in my possession what I believe to be a Fiorenzato T80. It grinds consistently, however, not all the beans are ground when I fill it with just a shot's worth. To make a, say 18g double I would have to put around 24g into the grinder. This poses so many problems when trying to find a sweet spot with my espresso machine, not to mention pricey and a waste of good beans. I don't have its hopper I must add. Any ideas on what is happening?

Bizarrely, if the machine is left idle for a bit and then switched on the remaining grinds come flying out when the grind button is pressed. So why not in the first place?

If I'm understanding correctly
you will need to disassemble the doser upper assembly
re position the 2 start spindles
there is a little notch in the front of the doser body
it will need to line up with the stainless steel drop shape plate
once everything is in place
screwing the plastic nut in top will regulate the amount of dosing in relation to every whack of the handle
( screw down less space equal less ground falling and viceversa)
you will need to hold down with your fingers the assembly in order to go smaller

slow whacks can keep the chamber open so always give it a nice fast and firm whack
at least half of the doser needs to be full in order to get good dosing

But, i gathered your complaint is that all the beans are not ground. I have a T80, with a hopper - a sawed off one. Typically, I slide the gate open at the bottom of the hopper, put in beans for a double shot, close the gate. So, in effect that's what you do by single dosing I take it. While you don't have the hopper, you must use something to act as a lid over the burrs, yes? For some time, I used a glass ash tray that was just big enough. In either case, my experience with this grinder is that a lot of beans find a place to hide on the ledge above the top burr. The only way to defeat this that I see is after initial grind, remove the cover, brush the beans you see into the burrs and grind again. Also, some ground coffee always remains in the chute that delivers the coffee to the doser. I also brush that out after I'm done grinding. From discussions I see here and on other sites about grinders, these are not unusual problems with a grinder - especially when single dosing. After all, these grinders were designed to be used in a busy shop where the hopper would be kept full and there would be a lot of grinding going on. In that case, the few beans that get lost in our cases would hardly be missed. After all, once the spaces are filled up, there's no place for new beans to go. In fact, most of the time, I do not meticulously clean out the wayward beans as I grind about 6 doubles in the morning. So, I only clean out the lost beans once a day at the end of my session.
