Bypassed the temp safety switch and it has reached temperature.
Does this mean I need to replace the temp safety switch?
Or parts within the temp safety switch?
Or do I have to replace the tstat?
Or both the tstat and the temp safety switch?

Sweet! Now you can make coffee which is what it's all about.
Replace pstat if it keeps heating and doesn't stop at set point( usually around 1.1 bar)
Try the temp switch again because you said you swapped wires on the blackened terminals of pstat. That could've been the problem all along since carbonised/burned contacts won't conduct electricity. Otherwise replace temp switch(around 60-70 bucks)

Hi again.
The temperature stops at 1.1 bar so I presume the pressure stat is working.
I guess it must be the temp safety switch then.
Unless it's the tstat - is that possible?

The pressure stat is stopping at the set point so therefore it is working as it should.
I would try connecting the temp switch again to see what will happen. If it still doesn't work, swap it out.
As a fun thing to do, try pulling the temp switch apart to see what makes it tick. I love to tinker in this manner
