I just watched the Rob Hoos video and had about the same reaction as the group discussion right after he finished..
A ton of scientific info and not much useful info to help me roast.. I guess that's why no one could really comment on his video afterwards
I was hoping for a lot more but I'll have to check out the rest of the videos..

He does a good job of helping folks understand the changes in acid perception and flavors depending on development time. Really, there's only so much you can stand up there and say, without making broad generalizations. Lecturing on one specific crop of coffee alone would only yield useful suggestions for that one coffee alone and wouldn't help many people, so some wider brushstrokes are generally what you're going to find. Rob's done an excellent job and his presentation skills are excellent. He'll be having a similar roasting discussion/presentation here in the Bay Area in a few weeks.
