Yeah, so I just finished crying from being so happy.

Took me like 20 minutes of flushing and thermostat adjustments, but as soon as I finally got it to dip down to 197 F, I pulled. It shot up and levelled off at 206 F and what I then tasted was like someone sprinkled my espresso with cocoa powder.

I think I've been brewing waaaaaaay too hot this entire time. Can't wait to try my decaf.
