I find it interesting that the Mahlkonig K30 owner manual and instructional videos advise to just adjust either way as necessary without grinding. But the instructions for the Pro-M espresso, another 65mm flat steel burr grinder from the same manufacturer, tell you that the grinder must be running (or empty) when you adjust. Not sure why, possibly because you sorta need three hands to adjust the K-30 while grinding. Or maybe has something to do with the narrow K30 adjustment range - has only a couple hundred microns of vertical burr movement between 0 and 10.
That never quite worked for me on my B. Vario. I had the willy-nilly effect described by the OP and others, which I attributed to the lower burr not dropping down with the adjustment cam (as baldheadracing pointed out earlier.) I did single dose though, and when I wanted to go a few notches coarser I would drop the micro lever down (coarser) maybe six notches, throw some beans in, then while grinding raise the micro lever (finer) to the point I wanted. When going finer I would just drop some beans in and adjust while grinding. I would grind-til-empty when making these adjustments and then drop my weighed dose of beans into the hopper for the real shot.cmin wrote:I single dose, but always make adjustments finer or looser with power on and hopper empty.

Did you buy your Baratza new or refurbished? My first Baratza was a refurb and it had issues -- the timer didn't work and you had to dial it all the way down to nearly 0 in order to get an espresso ground (worn burrs perhaps?). They kindly and promptly replaced it and the replacement worked great.

Mine was a refurb, and the first one was DOA, this one was a replacement of that DOA (and a newer one at that).
I think I have it mostly down - not sure what it was, but it just started working as expected. I pretty much have it dialed in now, and am using it numerous times a day successfully (knock on wood).
