Do coffee greens need exposure to fresh air?

I've recently begun roasting, and I've been buying green beans in 1kg quantities, which I've been decanting into large preserving jars. It suddenly worried me that it might be a problem that the jars have air-tight seals. Of course, there will still be some air in the jars when I close them. Need I worry?

No. As long as you don't store them too long and avoid humidity and light they should be fine. Some people vacuum seal them and deep freeze to store for longer periods of time. There are some other threads on green storage you may want to look at.

Your main concern there would be mold if the moisture levels were too high ( if they were just stored in jars).
