I'm learning right now as well. Occasionally I can get something resembling art, most times I can't.

Sounds like you need a bit more air and to pour a bit faster. One of my mistakes I recently realized was that I've been pouring too slowly - when you pour too slowly, the textured/foamy part of the milk ends up sitting on top of the liquid milk at the spout and the liquid just slides out underneath. Thus you'll never get any of that white to show up. I think while we're learning, we're all a bit timid, want to take things slowly, and it's natural to want to pour slowly.
