For what you are doing, a plain old type K thermocouple would work. I have not used the iRoast so I am not sure how you will get it into the bean mass for temperature. You do not need 0.1 accuracy so don't spend a lot on something that will be overkill. For most of my applications, I use a Fluke54II datalogger and type K thermocouples in either bead or shielded probe form. Give eBay a look; you can usually pick up thermocouples on the cheap. If you have TIG welder you could even get the wire and weld your own together.
