I'm enjoying a cup of Sumatra Blue Batak Peaberry, brewed using my Hario siphon at ~91 celsius for about 1 minute. I'm using the same grind which would call for a 3 minute brew time in press pot. Sweet throughout the cup. The body is much more noticeable in this Sumatra than some of the cleaner/brighter coffees. Flavors are very intense and defined. Coffees with more complexity lend themselves very well to this method.

I highly recommend this Sumatran, the sweet plum, almost a candied plum shine throughout the cup and wine flavors emerge as the cup cools, spice notes seem more dispersed evenly using the siphon, more of a finishing note using the press.
This batch was roasted to Full City.
I think I'll have another.

I also recommend this Sumatra. I roasted this to just a few snaps in 2nd. Just pulled a SO shot from Silvia and wow my lips puckered. Sweet, and yummy.
