Ok, i had 2kg's of beans arrive today from a dealer just about an hour from here. They came in brown paper bags. Should I keep them in these bags (they feel kind of like brown grocery store bags). Or should I put them in a ziplock bag, a glass jar? I surely do not want them to go nasty and want to store them correctly. Keep in mind I'm in the middle of nowhere so can't exactly pop out and buy green coffee bean bags, etc. Thanks!

It's hard to find information on storing green coffee... really? Did you look in the FAQs and Favorites Digest (hint, hint)? :wink:

I store my greens in a basement that has a year round RH range of low 40's to upper 50's and air temps in the upper 50F to mid 60F. Relatively wide fluctuations from one extreme to the other. Stored in cotton bags that are stored in open mesh bins. The stash of greens will vary from ~#30 to ~#50. Rare that any specific green bean last more than 6-8 months. If there is any breakdown in the quality of the beans it's subtle enough that I don't really notice. I just live with the limitations of not being able to replace a bean I really like and hope to find another green I really like.

For 2kg a clean cotton bag or brown uncoated paper bag away from extremes in RH, temp and sunlight should be ok. Assuming the 2kg will be all roasted within 2-4 weeks.
