One thing I've been noticing lately on both of my Gaggia Factory machines - since I've started using the single basket (with the naked machined portafilter) - after the pull is finished, if I leave everything alone for about 30 seconds or so (I know - supposed to drink it right away & not let it sit...), a long and wide hanging inverted bell-curve/cone shaped "dollop" of tan crema/foam develops from the bottom of the basket, hanging from the bottom of the basket almost all the way down to the surface of the espresso in the cup below.
If I want it in the cup - sometimes it (or most of it) drops in by itself shortly after it forms, sometimes it doesn't drop and needs to be "coaxed" off the bottom of the basket and into the cup (and hence another use for the WDT needle

, used in knife-like fashion, as horizontally as possible).
- Seems to happen regardless of the coffee, grind or tamp...
- But doesn't seem to happen with the double basket.
Is this final, post-pull, "hanging dollop" to be expected? Personally, I like it and will continue to coax it into the cup for my shots, but is it properly considered "fit for the cup" when pulling for guests?
