My latest roast came out quite weak :(

it might need more rest time. Also sometimes yirg coffees are just "weak" some people take this as a pro and praise it's "tea like" qualities

Nicaragua Roast

In my opinion fc came too fast, try for around the 8:30-9:30 mark. Also your rate of rise got really high at the beginning which tells me you need turn on the gas later or use less gas at the beginning of the roast. Try to not have your ROR be above 40. You might want to also

US Customs Duty for Coffee Roasters

There is a difference between duties/tariffs and brokerage fees or taxes. Many times you'll have to pay a brokerage fee and/or some taxes but you might not be paying duties/tarrifs

My weekly roast - Mexican Chiapas Organic - 750 grams

For my tastes the development time is too long. I would probably have tried to hit SC closer to the 12-13 minute mark. With a development time that long you really have to pay close attention to your RoR as it gets really really low and you risk stalling. Even at your roast now I'd say you

Roaster identification

I don't think it's a toper or an ambex. It's some kind of asian roaster from China or Korea. More like a North roaster

Roast or Source for body?

Tough question: Depends on where you are starting. If you are trying to get more body out of what you have then it's roasting. If you are looking to blend then it'll be sourcing and roasting to maximize body

Roasting too fast in the Behmor?

I think your times are fairly normal. If you're going to second crack those times are probably OK but if you're looking for faster (~8:00 to FC) light roast coffees then the behmor will struggle. The behmor also has next to no air flow which also affects the clarity in the coffee
