Yirgacheffe single origin espresso brewing temperature?

Ok I'm at 214f now so I'll give it a whirl. I love this stuff, albeit from the UNIC commercial machine and Mahlkonig grinders they run. I don't even use Turbinado sugar or half/half with the Yirgcheffe. Very smooth and interesting taste

Yirgacheffe single origin espresso brewing temperature?

Just picked some up from my favorite spot here in Dallas, and the barista recommended I try 18g and set my PID around 210 to start. My machine is a Gaggia classic. Anyone working with this bean? Thanks in advance, Alex

Ok fast forward what, a week or two? I have an infant son in my care so the months slip by quickly...with D4F's gracious help I made a few mods, discussed my quest for intrashot stability, measured my output from the Classic and actually ended up with vastly improved shots from a waning bag of beans...

I have no idea what my actual temps are as I've not calibrated my PID or used a thermofilter, but unscientifically I'm getting maybe a 5 degree drop over a 25 second shot. Maybe I'll bump it back up to 225F....see what happens. I think my espresso is better than before but not way better. Nice to have the exact temp though. Is there any way to see what my temps are without a Scace thermo filter or the like?
