Taste balance of double vs. triple espresso

I generally like the taste of the 15 g VST basket and was wondering if I could get the same balance of flavors in the 21 g VST basket. I know updosing emphasizes the acids/bitters, but I'm trying to figure out how to keep the same balance but make it more pronounced. I'm asking because I haven't yet...

Effect of dose and grind: a graphical representation

I've been using this technique to dial in my shots for awhile and it works incredibly well. My question is when do you decide to adjust temp vs grind? Since using this method, I haven't needed to adjust my temp, leaving it at 198

Is there a barista's favorite brand or type of milk?

In NYC, many of the coffee shops use Battenkill and it's quite delicious. They sell it at Eataly and definitely worth the money

No body on shots from Pre-Millenium La Pavoni

Actually, I have the same grinder as we do at work, which is a Mazzer Mini. When we did the test here, we used the same coffee (Counter Culture Toscano) and prepared the espresso the same exact way, but had very different results. The one on my machine was a bit bitter and had almost no body and

When I first got it I did do it that way but the shots always tasted burnt so I switched to just using the "I" setting and waiting for it to heat up. Did you wait for the pressurestat to start blowing before setting it to the lower setting? I've pulled better shots just heating it on the espresso se...
