Normal to get "yellow" beans from Metropolis Redline?

It's a form of quaker. Usually most of them are found in Natural processing. Redline use some Natural ethiopian if I remember well for their blend. They could affect the taste of your coffee, but some don't. You can remove them, but it's part of the taste

Pour looks good but tastes terrible. What am I doing wrong?

The coffee seems very refresh and bubbly, I would have dropped the dose and tighten the grind. Also in the video it's pulling too fast. Like other said, even with a good shot, if the coffee is bad, the shot will be bad

Quality budget coffee options in Canada?

Social is probably the cheapest. Speciality coffee as a price... Paying fair trade price, I wouldn't see anybody selling under 10$ a pound. And nobody does, expect for high volume purchase. Market is in that 16$/12oz range

Burundi Greens

Had some tasty Burundi from 49th, Counter Culture and Terroir this year. Even one in an espresso blend. I did not turn crazy, did not even get any potato brew!

How do coffees acquire certain flavors?

If you want to go further we can add the soil, climate, altitude, season (1st harvest or second for example). All things that affect the quality and the final cup. Not much emphasis is put on those, but they are key for quality fruit. Will post later on what I "expect" from different origin/beans. I...

If I remember well, Klaus Thomsen found that it was hard to associate a specific taste to a coffee varietal like wine grape. Processing influence a lot on the final result on the flavor/body/acidity/sweetness side. I do think some varietal are easier to pick up the lot (ex: bourbon, SL, Geisha, Catu...
