If you really want to dial in your water, you will want to get some Hach analysis kits and figure out exactly what you're dealing with. Then you can decide if you just need some filtration or full on treatment. I ended up using RO with blending, the OptiPure BWS100, which allows me to dial in my water

Why did you skip over the Hydra VIP? I've owned a few high end machines and I find my Hydra to never get in the way of producing a wonderful shot with incredible consistency. It has all the control I need. I can't imagine a better machine (although I am biased!!). I also have the EG-1

As Doug said, you need great coffee to start with. Also, great equipment. At that point, the difference between good and great baristas would be the ability to identify and exploit very minor nuances while keeping everything in the sweet spot as the day goes on
