Most of the cafe and coffee geeks in Taiwan like to brew at 88C, I guess that is from Japan, I seldom met people use 95 C here, I personally like 88-91C over 95C

{video} You can see the Kono drip method from this video , Mr Yamada teaches Kono drip method in Taiwan, he had learned it from Kono Japan. However I see some variances even they are directly learned from Kono.(河野雅信, son of the founder). I saw one brew for 5 minutes with crazy slow water drops.
