Balance in Espresso is Intense Bitter and Sour Cancelling Each Other Out
Do you have a an idea how that relates to temperature? Is the sensation of bitter and sour influenced by temperature? A related observation perhaps is that salt reduces the sensation of bitterness

2 month old Kimbo from Italy produces great espresso. I'm confused!
I wouldn't trust the opinion of someone who compares sausages with steak ... It's a bit too meta for me

Faema Due Restoration
If you need parts, you could try Faema Mertens in Hasselt ({link}) When I had to repair my Faema Family they found some old parts in a dusty drawer. They have a showroom in Antwerpen

Problem with the double basket and crema
I would look at your grinder too. Even with Lavazza, Illy, Segafredo etc. you should be able to avoid a watery taste and get lots of crema. Some of the Lavazzas are real crema bombs. The only things you need are a decent grinder and a minimum of technique (if your machine works properly ...). Last w...

Londinium I unstable brew temperature.
I agree. A couple of months ago I wrote a few articles about social media (for a magazine specifically aimed at companies in the construction business). Although I lost interest in the L1, I still follow the thread because it's a textbook example of what social media can mean for products and compan...

In Italy, a spiritual search for the essence of espresso
I'm also surprised that you use the expression "comfort-style". Are you referring to Italian espresso? I've had more that one in Italy that I wouldn't describe as "comfort-style" (with all that Robusta in the blend ... )

In Italy, a spiritual search for the essence of espresso
Perhaps the main coffee you're writing about goes well with milk. But that doesn't mean it approaches Italian style espresso. In general, Italians don't care about milk based drinks. It's not a secret that relatively few Italians order cappuccinos (although a macchiato is more common) and that latte...

In Italy, a spiritual search for the essence of espresso
Are you guys certain you have been in Italy? What has been described here is accurate for much of France. But I've been in Italy many times, from Torino and Trieste in the North over Venice, Bologna, Ascoli Piceno, Perugia and Salerno to Lamezia Terme in the South (you can't get more southern than L...
