For your purposes cold brew may be best. Otherwise, you'll only become increasingly frustrated if you don't adjust your parameters to what is optimal for a particular brewer. I'll post here if I get a good dark roast 6 cup moka pot brew using my Bialetti

Helpful photo. Go by taste. If it's still tasting overextracted, try grinding even coarser and/or filling the boiler less to reduce the brewing heat, per the James Hoffman video. You don't want to exceed 80C at any point

I think that's too fine. I think I'm around 2- 3 times coarser but will check. Remember that moka pots take long to brew, they don't brew under high pressure, and the coffee grounds swell during this slow process. These "mistakes" help you learn about dialing in overall. Lucio said earlier that he prefers 3 cups and 6 cups are good too. I find it easy to brew with both, so I encourage the OP to just grind coarser, and it'll work out. He's close
