It's hard to tell whether that's rust or brass showing through where the chrome was removed by intensive descaling. With the siphon tube, you could try seeing whether Evaporust removes that coating. Agreed. I've never had a siphon tube look roughly red like that. They're either black with oxidation or pink, smooth copper

Do you have a rusted siphon tube? Also, BTW, if you do lots of descaling, that doesn't necessarily clean coffee oils in tight and remote places

IKAWA Home - profiles

This may have to do with the slow pace of the roast for this machine. Keep in mind that a drum roaster has much lower air flow. Maintaining those temperatures over that period of time drives a lot of heat into the roast. I would try reducing the length of the roast by a minute or more and

Good luck with this. Piston gaskets can tear or degrade or may just not be a perfect fit. Or they can be installed facing the wrong way. Also if you can't taste solvents used in the past, that would be ruled out. Some solvents or lubricants can degrade some piston gaskets. You might make sure there ...
