Puck Screens Too Small for Straight-Wall Basket?

Keep in mind that those holes may not be channeling holes during extraction. Are you seeing blonding around the edges of the basket when you are pulling a shot? When you end the shot you violently release pressure backwards so I've never found any real use in looking at post pull puck for diagnosis ...

Roast taste at all roast levels

You're likely giving it too much heat later in the drying stage. You can hit beans at the dump with some decent heat as they have a ton of moisture in them and a good preheat on the roaster if it's cold out. By the time I'm 2 minutes in I'm (IIRC) down to about a 48F ROR then 40

Just a side note - it's best to disconnect the heating element when testing for resistance to be sure nothing down the electrical line is influencing the reading.
