I would keep your cash in the bank, if the business is any sucess at all you will want a two group in a flash. Only restaurants with a seated captive audience seem to get away with a 1 group but for a cart it is painful to present one half of a pair of customers with their first flat

La San Marco Model 80 Lever rebuild
I undid mine (Izzo with LSM group) by wrapping the bottom of the piston in a strip of leather and gripping it firmly in a vice. It unsrewed quite easily without damage

Be interesting to see what happens but I think weird things will happen to the chaff, as if it's not being sucked out the top of the drum via negative pressure it will build up in all the small gaps and drum perforations or just stay with the beans and burn
