Absolutely. Fines are small particles that fracture off when you break beans. The more breakage, the more fines. +1 to Jim's response. I tested the variable speed Ultra Grinder a couple of years ago, and got the slowest pours / greatest puck resistance at 500 rpm. Tamping question for the experts
It's unlikely that tamping harder would change an "ideal" shot into a choker. I suggest you do the following test:{table}I don't know what grinder you are using, but this should eliminate that as a factor. Let us know if you still see dramatic extraction differences
