Is leveling off the coffee necessary?

I can't imagine that anyone will dispute that the pour and/or visual appearance can indicate something about the coffee. Based on my experience, "proper" pours will yield a superior flavor in the cup. I have never had an "ugly" pour yield me a great cup. This is evident at barista competitions over ...

Is leveling off the coffee necessary?

I did quite a bit of testing when we were trying to decide what direction we wanted to go with espresso grinders. I have to try to find all my notes on my computer, but my testing was with the Ditting/Mahlkonig espresso grinder. I ran 250 shots based on the assumption that every coffee house should ...

Cuvee Coffee Meritage Espresso Blend

Obviously there are known variables that will produce good or bad results, but there are fundamentals that can serve as a starting point. E...

Cuvee Coffee Meritage Espresso Blend

Jason: Sorry for the delay in response, I was not able to log in after the HB server change. Thanks for the note. If I were making wine instead of coffee I would be a bad, bad boy (if I did not pay the fees). Since I am using the word for our coffee, I am in no

Cuvee Coffee Meritage Espresso Blend

Back in 2001, my business partner and I started heading in different directions so I bought his half of the business and changed the company name to Cuvee Coffee (we used to call our espresso blend Espresso Cuvee). In keeping with a sort of wine theme, I called the espresso blend Meritage much like ...

Cuvee Coffee Meritage Espresso Blend

Yes, the new roasting plant is on HWY 71 in Spicewood...about 25 miles west of downtown. The building is up and the electrical/build out is starting. Our new roaster is supposed to hit the port of Houston today and should clear customs in a week (so they tell me). Once we get the new roaster up and

Cuvee Coffee Meritage Espresso Blend

Greetings Men, Thanks for all your input thus far and thanks for diving so deep into this coffee. I really enjoy hearing ALL of the feedback. I think I really put you all on the wrong path out of the gate. When I say .75 - 1 ounce, I meant per shot...not total volume. Dan
