Quick update: 50 clicks on the Comandante has me in the ballpark (I believe that's considered its maximum setting, way beyond French press), but I am still comparing the results with my old grind and will no doubt refine the setting

Going 'forward' there would be less control. Water cools at a specific rate in given conditions, making it do so faster would require some new technique. In my process I can cover a wider range of temperatures in a shorter time using a gas flame. I would also say that you need the most control at the
