Drums with metal finishes are a poor choice for thermal radiation

If modding the SS drum of a Hottop this way changes it's heat transfer capabilities by as much as Arpi's figures, you should notice a major taste profile/defect behavior difference too. Sweet Maria's No-Name-O

I found this one to require a significantly long roasting time, especially for drying, otherwise it tastes too grassy and sour. Any thoughts on this?

Nailed it! A new roast profile brought what we thought were dead beans back to life, it was indeed that freezing affected these greens. The frozen beans needed a longer roast then the never frozen ones, both during ramp and development. Now I get peaches and beautiful red fruit brightness instead of...

Defect Cupping for Dummies
