Tweaking sour espresso, now I'm stuck?

Sour comes from under extraction. Unless there's something else glaringly, obviously wrong, temperature is where you should have started to cure consistently sour espresso and it's where you should go next ... at least until you identify it or eliminate it as the root of the problem. Whatever your P...

Another place with Ceado parts

If it's the guy I'm thinking of, he posted here and at CG. A non-owner, he was outraged because he (erroneously) assumed WLL didn't stock parts that they didn't publish on their website. I called WLL and confirmed that they did -- indeed -- carry the parts. When I told the poster, he remained outrag...

La Marzocco Linea Mini worth additional cost over E61 double boiler espresso machine?

There are many grinders which present a better cup and with less fuss than a Super Jolly. It would be a shame to handicap a machine as good as Linea Mini with any grinder less than excellent. Rich

Grinder for French Press Suggestions

A Vario or Forte with steel disks (designated as the "B" version of each model) is borderline excellent for pour over and auto drip, very good for FP. A Bunnzilla (which can be done for less than $800, but requires some degree of shopping for a donor Bunn G series, and a certain amount of diy), if

Add Espresso to Milk? Why Not?

No. Milk should be steamed as quickly as possible within the barista's ability to control the process. The longer you steam, the more the milk's proteins coagulate... which makes the foam "gummy." You want (or at least probably want) something more like a rich liquid than like marshmallow. Let's hop...

Buying a reliable new/used espresso machine, max budget $2500

The Pharos is plenty good enough. Unfortunately, yours is (reportedly) dead and OE isn't currently making them. Also, I didn't say the SJ wasn't up to the "demands" of a high end espresso machine. The SJ is a strong, reliable grinder, but it's neither excellent nor outstanding in terms of grind qual...

Buying a reliable new/used espresso machine, max budget $2500

MachinesThe problem is easily solved. Put it on a timer or just leave it on all the time. We use a GE 8 outlet light strip that has four outlets on a timer, costs $21, and has worked perfectly for four years. Almost every true commercial, single group machine, as well as most prosumers -- including ...
