Shot volume from La Pavoni Pro
I believe the pump chamber holds about 1.5 oz of water, so 1/2 oz is absorbed by the puck. The instructional video shows the "double pump" technique in pulling a double (in volume). I personally don't do that because it adversely affects the taste for me

Weird La Pavoni Professional Leak

I'm not sure of the concept 'infused' vs 'saturated' for this particular model. When the brew water reaches the head, it is superheated and needs to cool down to brew temperature.
