Shot volume from La Pavoni Pro

I believe the pump chamber holds about 1.5 oz of water, so 1/2 oz is absorbed by the puck. The instructional video shows the "double pump" technique in pulling a double (in volume). I personally don't do that because it adversely affects the taste for me

Considering a lever, please convince me that the Gaggia Espresso is enough for now!

I've enjoyed my Pavoni immensely. To compare it to a pump machine, I would compare it to driving an automatic vs. a stick shift. A Pavoni gives you more control over the variables meaning you'll have to pay more attention to the details. When I use the Pavoni, I seem to anticipate the quality of the...

La Marzocco GS3 at a good price *and* from a reputable dealer, et. al.

Hi, I got mine from Cafe Machines Co. out of FL, #249. I can say that it delivered just fine with good service. He kept me up to date with how my order was being processed -- from freight from Italy, arrival to Seattle, then UPS tracking #. I have no complaints. However it seems with

Weird La Pavoni Professional Leak

Yes, it's the clear gasket on the right that's the culprit. It is a V-gasket When you remove it, note the orientation of which way the gasket is facing. Let's see. Other things: 1. The bolts attaching the head to the boiler are metric. 2. The e-clips attaching the lever to the piston rod

The sinking value of the US Dollar

I understand the Japanese have something to do with price of Kona, and Blue Mountain, for that matter. After all, if Kona didn't command such a high price, the plantation owners would quit growing coffee and stick a hotel on it instead. In the end the commerce of espresso machines is all about

Lever Espresso Machines Smackdown

Hi Caesar, There is always water in the grouphead. Even after the machine is off and cold, the water is still in the grouphead, held suspended by vacuum, as no air is allowed in the grouphead. I haven't yet found an accurate schematic of a Pavoni head (and I would draw one if I were any sort

The sinking value of the US Dollar

Besides at this point, no one expects the dollar to continue it's slide forever. US is in recession at the moment (don't ask the politicians, though). Hopefully, the dollar will reverse its trend late this year or by next year

Lever Espresso Machines Smackdown

When I first turn on the machine in the morning, I find my first shot, if I don't flush first, to be too cool. The espresso runs thin and the flavor is bright. The second shot is near perfect with good mouthfeel. The third shot is too hot/bitter and loss of mouthfeel. By the 4th shot

Lever Espresso Machines Smackdown

I'm not sure of the concept 'infused' vs 'saturated' for this particular model. When the brew water reaches the head, it is superheated and needs to cool down to brew temperature. Thus, the grouphead acts as a heatsink in this manner. However, the brew water does not recirculate with the boiler agai...
