I'm not sure I'm 100% following what you want, but if you want burrs that are "better" for medium or dark roasts, I think the SSP HU are going to be further in the wrong direction compared to stock EK burrs. I have both and found the HU to be a bit of a weird burr in terms of high

98mm SSP cast burrs for espresso
I suspect the ssp cast will be sweet enough for you. I find them sweet (although this is probably the most subjective of all qualities). FWIW I had an 804 lab sweet for a few months are didn't care for it. Seemed very hard to dial in. Messy. Overall just very clunky

98mm SSP cast burrs for espresso
I use these in my EK. Also have the HUs. Can attest good for both espresso and filter. Prefer cast for filter for sure (more sweet, less in your face random flavors that can be good or bad). Espresso they were both great
